Papdi Chaat: A Flavourful Journey of Indian Street Food

Ingredients:


For the Papdi:

  • 1 cup all-purpose flour

  • 1/4 cup semolina (sooji)

  • A pinch of baking soda

  • Salt to taste

  • 2 tablespoons ghee (clarified butter)

  • Water, as needed

  • Oil, for frying


For Assembling:

  • 1 cup boiled potatoes, diced

  • 1 cup boiled chickpeas

  • 1/2 cup plain yogurt, whisked

  • 1/4 cup tamarind chutney

  • 1/4 cup green chutney

  • 1/4 cup finely chopped onions

  • 1/4 cup finely chopped tomatoes

  • 2 tablespoons chopped fresh coriander leaves

  • 1 teaspoon roasted cumin powder

  • 1/2 teaspoon red chilli powder

  • Salt to taste

  • Sev (crispy chickpea flour noodles), for garnish


Instructions: For the Papdi:

  1. In a mixing bowl, combine the all-purpose flour, semolina, baking soda, salt, and ghee.

  2. Gradually add water and knead the mixture into a stiff dough.

  3. Cover the dough with a damp cloth and let it rest for 30 minutes.

  4. Roll out the dough into a thin sheet and cut it into small, round shapes using a cookie cutter or a lid.

  5. Heat oil in a pan and deep-fry the papdis until they turn golden brown and crispy. Drain on paper towels and set aside.


For Assembling:

  1. In a large serving plate, arrange the papdis.

  2. Top each papdi with boiled potatoes and chickpeas.

  3. Drizzle whisked yogurt, tamarind chutney, and green chutney over the papdis.

  4. Sprinkle chopped onions, tomatoes, and fresh coriander leaves on top.

  5. Season with roasted cumin powder, red chilli powder, and salt.

  6. Finish with a generous garnish of sev for added crunch and flavour.

  7. Your Papdi Chaat is ready to be savoured! Each bite offers a symphony of flavours, from the crispiness of papdis to the creaminess of yogurt and the tanginess of chutneys. The combination of spices and textures makes this street food favourite an absolute delight.
