The sausages are pan-fried to a golden-brown perfection, their juicy, spiced flavours complemented by the smooth and buttery mashed potatoes. The star of this dish is the onion gravy: a robust blend of caramelised onions, savoury broth, and a touch of seasoning that adds a rich, umami depth to each bite.

Ingredients:

Sausage and Mash:

8 pork sausages

2 lbs potatoes, peeled and chopped

1/2 cup milk

1/4 cup butter

Salt and pepper to taste

Onion Gravy:

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

Salt and pepper to taste


Instructions:

  • Preheat your oven to 400ยฐF (200ยฐC). Place the sausages on a baking sheet and cook for 25-30 minutes, turning halfway through, until browned and cooked through.

  • Meanwhile, place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes. Drain well.

  • In the same pot, mash the potatoes with milk, butter, salt, and pepper until smooth and creamy. Keep warm.

  • To make the onion gravy, heat the olive oil and butter in a large skillet over medium heat. Add the onions and cook, stirring often, until they are caramelised and golden brown, about 15-20 minutes.

  • Sprinkle the flour over the onions and cook, stirring constantly, for 1-2 minutes.

  • Gradually add the beef broth, stirring constantly to prevent lumps. Add the Worcestershire sauce, and season with salt and pepper to taste. Simmer for 5-10 minutes, until the gravy has thickened.
