Ingredients:
For the Dosa Batter:
1 cup parboiled rice
1/4 cup urad dal (split black gram)
1/4 cup poha (flattened rice)
Salt to taste
For Making Dosas:
Vegetable oil or ghee (clarified butter)
Aloo masala or your choice of fillings
Instructions: For Preparing the Dosa Batter:
Rinse the parboiled rice, urad dal, and poha separately in water.
Soak them in enough water for 4-5 hours or overnight.
For Grinding the Batter:
Drain the soaked ingredients and grind them into a smooth batter using a little water.
The batter should be thick yet airy.
Add salt to taste and mix well.
Ferment the batter in a warm place for 8-10 hours or until it doubles in volume.
For Making Dosas:
Heat a non-stick or cast-iron griddle (tava) on medium-high heat.
Grease it lightly with oil or ghee.
Pour a ladleful of Dosa batter onto the centre of the griddle.
Quickly spread the batter in a circular motion to form a thin pancake.
Drizzle some oil or ghee along the edges.
Cook until the Dosa turns golden and crispy.
Place your choice of filling (like aloo masala) on one side of the Dosa.
Fold the Dosa over the filling to create a semi-circle or roll it up.
Serve hot with chutney or sambar.
