Ingredients:

1 kg chicken wings

½ tsp salt (adjust to taste)

1 tsp crushed chillies

½ tsp black pepper

1 tsp bouillon powder (e.g., Maggi/Knorr)

1 tbsp corn flour

4 tbsp all-purpose flour

Bunch of spring onions, chopped

4 mixed chillies, chopped

1 tbsp crushed garlic

Vegetable oil for frying

300 ml water


Instructions:

  • Wash and pat the chicken wings dry.

  • Mix the chicken with salt, black pepper, and bouillon powder. Let it marinate for at least an hour or overnight.

  • For the batter, combine corn flour, all-purpose flour, and a bit of salt with water to make a light batter. Set aside.

  • Heat enough vegetable oil in a pan or wok until hot.

  • Coat the chicken wings in the batter, then fry in batches for 8-10 minutes until golden brown and crispy. Drain on kitchen paper.

  • In another wok, heat 2 tbsp of vegetable oil and sauté the crushed garlic for about 1-2 minutes.

  • Add chopped chillies, crushed peppers, and spring onions. Stir fry for 1-2 minutes.

  • Toss the fried chicken wings in the stir-fry mixture until well coated. Serve immediately.
