Ingredients:
For the Blackened Shrimp:
1 b large shrimp, peeled and deveined
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1/2 tsp cayenne pepper
1/2 tsp salt
1/2 tsp black pepper
2tbsp olive oil
For the Grilled Corn:
2 ears of corn, husked
1tbsp olive oil
Salt and black pepper to taste
For the Avocado Ranch Dressing:
1 ripe avocado
1/2 cup Greek yogurt
1/4 cup buttermilk
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
Juice of 1 lime
Salt and black pepper to taste
For the Salad:
4 cups mixed greens (lettuce, spinach, arugula)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1 avocado, sliced
Lime wedges for garnish
Instructions:
In a bowl, combine the paprika, garlic powder, onion powder, dried thyme, cayenne pepper, salt, and black pepper. Mix well to get the best results.
Toss the peeled and deveined shrimp in the spice mixture, ensuring they are evenly coated. Set aside.
Preheat your grill to medium-high heat. Brush the corn with olive oil and season with salt and black pepper. Grill the corn for about 10-12 minutes, turning occasionally until it's charred and cooked through. Remove from the grill and let it cool slightly. Once cooled, cut the corn kernels off the cobs.
