Ingredients:
3 boneless, skinless chicken breasts
1 tablespoon olive oil
2 heads of romaine lettuce, chopped
3 ripe avocados, sliced
1 lime, cut into wedges
1 can (15 ounces) of black beans
1 cup of homemade mango salsa (see recipe below)
For the Mango Salsa:
2 ripe mangoes, diced
1 red onion, finely chopped
1 red bell pepper, diced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
Salt and pepper to taste
Instructions:
For the Mango Salsa:
In a large bowl, combine the diced mangoes, finely chopped red onion, diced red bell pepper, chopped cilantro, and the juice of two limes. Mix well to incorporate all the flavours.
Season the salsa with salt and pepper to taste. Adjust the seasoning according to your preference for sweetness and spiciness.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavours to meld together.
For the Chicken:
Preheat your grill or grill pan to medium-high heat.
Season the chicken breasts with salt, pepper and a drizzle of olive oil.
Grill the chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F (74°C). Cooking times may vary depending on the thickness of the chicken breasts.
