Ingredients:
500g lamb pieces (on the bone)
2 large onions, finely sliced
2 tomatoes, chopped
4 cloves garlic, minced
1-inch piece of ginger, grated
2 green chilies, slit
2 bay leaves
2-3 whole dried red chilies
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp red chilli powder (adjust to your spice preference)
1 tsp garam masala
Salt to taste
2tbsp vegetable oil
Fresh cilantro leaves for garnish
Instructions:
In a heavy-bottomed pan, heat the vegetable oil over medium-high heat. Add the lamb pieces and sear them until they turn golden brown. Remove the lamb and set it aside.
In the same pan, add the cumin seeds, bay leaves and whole dried red chilies. Allow them to sizzle for a few seconds until fragrant.
Add the finely sliced onions and sauté until they become soft and translucent. Stir in the minced garlic, grated ginger and slit green chilies. Continue to cook until the mixture becomes aromatic and the onions turn golden.
Introduce the coriander powder, turmeric powder, red chili powder and salt. Cook these spices for a couple of minutes until the oil begins to separate from the mixture.
Add the seared lamb back to the pan, along with the chopped tomatoes. Cook for a few minutes until the tomatoes soften and release their juices.
Reduce the heat to low, cover the pan, and let the curry simmer gently. Stir occasionally and add water as needed to maintain the desired consistency.
When the lamb becomes tender and the oil rises to the top, sprinkle in the garam masala. Stir to combine, allowing the flavours to meld together.
