4 ripe peaches, halved and pitted

6 cups arugula

1/2 cup crumbled feta cheese

1 tbsp curry powder

1 tbsp honey

1 tbsp olive oil

1 tsp Dijon mustard

Salt and pepper to taste


Instructions:

  • Prepare the Curry Pecans:

  • Preheat your oven to 350°F (175°C).

  • In a bowl, mix the pecans with curry powder, honey, olive oil, and a pinch of salt.

  • Spread the pecans on a baking sheet lined with parchment paper.
