Mediterranean Grilled Lamb Leg with Mint Pesto

Ingredients:

For the Lamb:

1 cup packed fresh parsley

½ cup packed fresh mint leaves

1 small red onion, chopped

4 garlic cloves, chopped

1 ½ tsp ground allspice

1 tsp ground coriander

1 tsp sumac spice

½ tsp ground cardamom

Juice of 1 lemon

¼ cup extra virgin olive oil

1 boneless and butterflied leg of lamb (3 to 4 pounds)

Salt

Mint Pesto:

2 tbsp toasted pine nuts

1 cup packed mint leaves

¼ cup extra virgin olive oil

Juice of 1 lemon

1 small garlic clove, peeled

1 small shallot, chopped

½ tsp honey

⅛ tsp salt


Instructions:

Make the Marinade:

Blend parsley, mint, onion, garlic, spices, lemon juice, and olive oil in a food processor until smooth.

 Prepare the Lamb: Pound the lamb leg to an even thickness using a meat tenderizer.

 Marinate the Lamb: Pat the lamb dry, sprinkle with salt, and coat with the marinade. Refrigerate for 2 hours or overnight.

 Preheat and Sear: Let the lamb sit at room temperature for 20 minutes. Heat a gas grill on high and sear the lamb on both sides for 2 minutes each.

 

Grill:

Lower the heat to 300-350°F, cover, and grill for 15 minutes, flipping once, until internal temperature reaches 130°F.

 Rest the Lamb: Remove from grill, cover with foil, and let rest for 5 minutes.

 Make the Mint Pesto: Blend all pesto ingredients in a food processor until smooth.

 Serve: Slice the lamb and top with mint pesto.
