Decadent Bailey's & Rum Bread Pudding: A Comforting Twist on a Classic Dessert

  • 1/2 cup sugar

  • 4 large eggs

  • 2 cups whole milk

  • 1 tsp vanilla extract

  • 1/4 tsp nutmeg

For the Glaze:

  • 1/4 cup Bailey’s Irish Cream

  • 2 tbsp Ray and Nephew Rum

  • 1/2 cup powdered sugar


Instructions:

  1. Preheat your oven to 350°F (175°C). Tear the bread into small pieces and place them in a greased 9x13-inch baking dish.

  2. n a small bowl, soak the raisins in the Bailey’s Irish Cream and Ray and Nephew Rum for about 15 minutes to let them plump up.

  3.  In a medium bowl, whisk together the sugar, eggs, milk, vanilla extract, cinnamon, nutmeg, and salt until fully combined.

  4.  Drizzle the melted butter over the bread pieces, then evenly distribute the soaked raisins (including any leftover liquid). Pour the custard mixture over the bread, ensuring everything is soaked. Gently press down the bread to help it absorb the custard.

  5.  Bake the bread pudding for 45-50 minutes, or until the top is golden and the center is set.

  6. While the pudding bakes, whisk together the Bailey’s Irish Cream, Ray and Nephew Rum, and powdered sugar in a small bowl until smooth.

  7.  Drizzle the glaze over the warm bread pudding just before serving.
