  • 1/4 cup fresh basil leaves, chopped

  • 3 tablespoons red wine vinegar

  • 1 tablespoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste


Instructions:

  1. Begin by cooking your preferred type pasta according to the package instructions. Drain and rinse it under cold water to cool it down.

  2. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt and pepper. Set the dressing aside.

  3. In a large salad bowl, combine the cooked and diced chicken breasts, halved cherry tomatoes, diced red onion, chopped basil leaves and fresh parsley.

  4. Gently fold in the diced avocados and grated Parmesan cheese to the mixture. The avocado adds a creamy texture and rich flavour to the salad.

  5. Carefully fold in the cooked pasta into the mixture, ensuring that all the ingredients are evenly distributed.

  6. Drizzle the prepared dressing over the salad. Be sure to mix it thoroughly to ensure all the ingredients are coated in the flavourful dressing. Adjust the salt and pepper to your taste preferences.
