Ingredients:
For the Marinate:
500g boneless chicken, cut into cubes
1/2 cup yogurt
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
Salt to taste
For the Gravy:
3 tablespoons butter
1 tablespoon oil
1 onion, finely chopped
2 tomatoes, pureed
1 teaspoon ginger-garlic paste
1 teaspoon garam masala
1 teaspoon ground coriander
1/2 teaspoon cumin powder
1/2 teaspoon paprika
1/2 cup cream
1/4 cup cashew paste
Salt to taste
Fresh coriander leaves, for garnish
For the Marinate:
In a bowl, combine yogurt, ginger-garlic paste, turmeric powder, red chilli powder and salt.
Add the chicken pieces and coat them well with the marinade.
Cover and refrigerate for at least 2 hours, allowing the flavours to infuse.
For the Gravy:
Heat butter and oil in a pan. Add finely chopped onions and sauté until they turn translucent.
Stir in ginger-garlic paste and cook until the raw aroma disappears.
Add pureed tomatoes and cook until the oil begins to separate from the mixture.
Sprinkle garam masala, ground coriander, cumin powder, paprika, and salt. Cook for a few minutes until the spices are well incorporated.
Reduce the heat and add cream and cashew paste, stirring gently.
Finally, add the marinated chicken pieces along with the marinade.
