Ingredients:
2 medium sweet potatoes
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
2 eggs, beaten
1/2 cup milk
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup all-purpose flour
2 tsp baking powder
1/2 cup raisins (optional)
Instructions:
Preheat the oven to 350°F (180°C). Grease a 9-inch baking dish and set aside.
Peel the sweet potatoes and cut them into small cubes. Boil them in a pot of water until they are tender, about 10-15 minutes. Drain and mash them with a fork or potato masher until smooth.
In a large mixing bowl, cream together the sugar and softened butter until light and fluffy. Add in the beaten eggs, milk, vanilla extract, cinnamon, nutmeg, and salt, and mix until well combined.
In a separate bowl, sift together the all-purpose flour and baking powder. Gradually stir the flour mixture into the sweet potato mixture until well combined. If using raisins, stir them in now.
Pour the mixture into the greased baking dish and smooth the surface with a spatula.
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center of the pudding comes out clean.
Allow the pudding to cool for a few minutes before serving. Serve warm, topped with whipped cream or a scoop of vanilla ice cream, if desired. Enjoy!
