Here's a simple recipe to kickstart your journey towards holistic well-being:

 

Quinoa Salad with Mixed Greens and Lemon-Tahini Dressing

 

Ingredients:

1 cup quinoa, rinsed

2 cups mixed greens (spinach, kale, arugula)

1/2 cup cherry tomatoes, halved

1/4 cup cucumber, diced

1/4 cup red onion, thinly sliced

1/4 cup chickpeas, drained and rinsed

2 tablespoons chopped fresh parsley

2 tablespoons extra-virgin olive oil

1 tablespoon tahini

1 tablespoon lemon juice

1 garlic clove, minced

Salt and pepper to taste

 

Instructions:

Cook quinoa according to package instructions and let it cool.

In a large bowl, combine the cooked quinoa, mixed greens, cherry tomatoes, cucumber, red onion, chickpeas, and parsley.

In a small bowl, whisk together the olive oil, tahini paste, lemon juice, garlic, salt and pepper to make the dressing.

 

Pour the dressing over the salad and toss to coat evenly.

Serve chilled and enjoy the nourishing goodness!
